If it is the case of responding to the demands imposed by the confrontation to new coronavirus in food production, the workers at the Liberación fruit and vegetable cannery factory are not far behind.

Las Tunas, Cuba.- During the first quarter of the year, 15 tons of tomato puree and 31 of mango and papaya jams were produced, the latter amount representing 102 percent of compliance with the established plan.

Osmany Cortés, director of the industry -the largest of its kind in Las Tunas-, pointed out that after two consecutive years without fabricating a gram of puree for lack of raw material: the pests decimated the plantations; now they produced it in a limited way because the harvest, already in its final stages, fell below the estimated production.

Inaugurated on May 1, 1984, in the La Victoria district of the capital city, this plant is seen by farmers as a guaranteed symbol for their harvests of fruits and vegetables, since it offers them a safe market and minimizes losses during the so-called peaks.

So much so that it currently has 34 thousand cans of half and 3.2 kilograms of capacity, which allow the processing of up to three tons of canned and in the bulk jam in an eight-hour shift, an amount that can double if the production requires it.

It is also worth noting that diversification in agricultural deliveries facilitates the production of various products, among which the ones mentioned above stand out, but also fruits in syrup, pickled vegetables and flavored syrups in quantities that exceed 22 thousand liters so far this calendar.

These assortments, especially the appetizing mango jam - today its star product - are offered both at the sales point located in outside the factory, as well as to other organizations and entities in the territory.

The comprehensive work of its 20 workers, in an industry with serious technological backwardness, which forces to face production processes in an artisanal way, shows that human capital and a sense of belonging stand out as the key to overcome limitations of all kinds and get ahead at times when the country needs more food for the population that fights against the coronavirus while complies with the restrictions to avoid contagion.
